Mechanic has had my car for more than 5 weeks. They said they had the reassembled heads back from the machine shop 3 weeks ago, but every week I've been calling and they keep saying "next week." Are they very slow or did they mess something up?

Hello, it's important that you get in touch with the leadership and management of the repair shop you have chosen. No, it doesn't take that long to replace head gaskets. However circumstances beyond control can cause delays. Probably not five weeks though! Contact management and leadership for more guidance.
